Here’s this week’s recipes  from the Agency St. Hy-Vee in Burlington, and Jim “Bodini” Lenz.

Bodini’s Refreshing Fruit Explosion

  • 1/2 of Lemondrop melon, cubed
  • 2 plumcots, chopped in large chunks
  • 2 peacharines, chopped in large chunks
  • 10 medium strawberries, quartered
  • 1 packet instant lemon pudding
  • 2 1/4 cup cold milk

Pan-Seared Salmon with Cipotle Yogurt Sauce

  • 1 1/2 cups plain yogurt
  • 1/3 cup jalapeno aioli
  • 1/4 cup chopped fresh chipotle peppers
  • 1/2 cup chopped green onion
  • 1/4 tsp salt
  • 1 shallot, chopped
  • 2 tbsp chopped fresh ginger
  • 2 tbsp canola oil
  • 2 lbs. skin-on salmon

Bodini’s Tomato-Pepper Salmon

  • 2 lbs salmon, skin-on
  • 1/2 tsp salt
  • 1/2 cup lemon juice
  • 1 large yellow pepper
  • 1 large red pepper
  • 1 large tomato
  • 2 tbsp chopped garlic
  • 1 (14 oz) can crushed tomatoes
  • 1/2 tsp white pepper
