Bodini’s Refreshing Fruit Explosion
- 1/2 of Lemondrop melon, cubed
- 2 plumcots, chopped in large chunks
- 2 peacharines, chopped in large chunks
- 10 medium strawberries, quartered
- 1 packet instant lemon pudding
- 2 1/4 cup cold milk

Pan-Seared Salmon with Cipotle Yogurt Sauce
- 1 1/2 cups plain yogurt
- 1/3 cup jalapeno aioli
- 1/4 cup chopped fresh chipotle peppers
- 1/2 cup chopped green onion
- 1/4 tsp salt
- 1 shallot, chopped
- 2 tbsp chopped fresh ginger
- 2 tbsp canola oil
- 2 lbs. skin-on salmon

Bodini’s Tomato-Pepper Salmon
- 2 lbs salmon, skin-on
- 1/2 tsp salt
- 1/2 cup lemon juice
- 1 large yellow pepper
- 1 large red pepper
- 1 large tomato
- 2 tbsp chopped garlic
- 1 (14 oz) can crushed tomatoes
- 1/2 tsp white pepper
